Breakfast is a culinary delight.
Your day begins with a coffee/tea tray delivered to your door.
Start with a fruit course made fresh with produce from our garden orchard
Baked goods: muffins, scones, and bread all fresh from the oven.
And finally the entrée... a few of our favorites: Eggs Benedict made with smoked salmon, garden vegetable frittata with fresh salsa, and pecan waffles with sauteed pineapple, all made with fresh organic ingredients from our garden or sourced locally.
Special dietary needs can be arranged at the time of booking.

Smoked Salmon Benny with a yoghurt hollandaise sauce
(recipe follows)

Recipe for Smoked Salmon Benny
Yoghurt Hollandaise Sauce
1 egg yolk
2 tablespoons lemon juice
1 teaspoon lemon zest grated
3/4 cup greek style yoghurt
2-3 dash Hot Sauce
1 teaspoon Dijon mustard
Eggs
8 large eggs
4 english muffins, toasted
3 ounces smoked salmon sliced, or use lox
1 bunch fresh dill
Capers
Directions
SAUCE
In a large metal bowl, whisk together egg, lemon juice
and lemon rind over a pan of boiling water for 1 minute.
Gradually whisk in yoghurt, dijon and hot sauce until sauce
is smooth and well blended.
It will be rather thin while warm, but will thicken as it cools
slightly.
EGGS
Crack eggs into shallow pan of boiling water.
Poach until done to your liking.
Meanwhile, toast the english muffins
Top with the salmon. Place on plate.
Top with 2 eggs per serving.
Spoon sauce over.
Garnish with fresh dill and capers.
